Wendy's Super Easy French Onion Soup

A few people have asked so I thought I would put the recipe up so anyone could grab it.  Enjoy!

4-6 Large (Softball Size) Yellow Onions

½ -3/4 Cup of Dry White Wine

Oil

8-10 cups of Beef Broth ( you can use vegetable broth)

French Bread toasted and sliced

Swiss Cheese sliced

Slice the onions.  I put mine in the freezer for a few minutes prior to cutting, otherwise its unbearable on my eyes.

Put a little oil in the bottom of a pan large enough to hold the onions.  Throw the onions in and let them cook down.  I stir them often.  The idea is to caramelize them and not burn them.  Once they reach a nice brown color, add the dry wine.  Stir the onions and wine together.  Add the beef broth.  Turn your stove down to low and let it cook for 30-40 minutes.

Using a ladle, pour your soup into oven safe dishes.  I use one serving crocks but casserole dishes work great too.  After the soup is in the crock, place one slice (for casserole dishes use enough to cover the soup) and add slices of cheese on top of the bread.  Broil in your oven until the cheese is melted and browned to your liking.

*Note- You may wish to add salt or pepper.  This recipe is also not part of my fast.
